Valentines Day x

Valentines Day is something I have always liked to celebrate in one way or another. Even when I was single I would use Valentines Day as a reason to buy myself some flowers or wear Red as its my favourite colour!

My Partner and I don't make a big deal out of Valentines Day we'll just go out to dinner or do something fun like we always do of a weekend, whether that be a bar, club or cinemas. This year we went out to a Turkish Restaurant for dinner and we was planning to go to a bar afterwards but my day begun with a migraine and shamefully I wasn't feeling myself.

Free From Pancake Mix

Happy Pancake Day! 

Yesterday I couldn't wait to get home from work so I could skip dinner and pig out on Pancakes. (Cheat Day)
I don't know how everyone likes their pancakes but this is how I like mine. (wheat free and dairy free)

All you need is:

- Almond Milk 
- Plain White Free from Gluten Flour 
- Weighing scales
- Jug 
- 1 Egg 
- Whisk 


So first you get your weighing scales and put 4oz of flour in, then move that into a bowl. Then add your egg to the bowl. Then use your jug to measure 1/2 a pint of your almond milk then slowly pour that into the bowl whilst stirring with the whisk. 

Whisk til all the lumps have gone and til the mixture is nice and bubbly and smooth, and thats it! 






Twinings Swiss hot chocolate mix is free from dairy. So I like to sprinkle that on my Pancakes with sugar, lemon juice and syrup! It seriously doesn't taste any different to a normal Pancake, it's just healthier I'm sure. Heres my finished Pancake

Saatchi Sundays

This weekend my partner and I went to the Saatchi Gallery in Chelsea for the first time! 
I've always wanted to go since I saw some pop art work online that was there which I loved! 
Its extremely modern and unique from my experience in Galleries and I love that they update the gallery every couple of months to bring in new Art. Heres some of my favourites- 

























The last few are the original prints which you can buy. If you haven't been before and you love Art Galleries you must go. Even the area surrounding Saatchi is artistic and beautiful, and its right off Kings road so there's nice cafes and restaurants to go to afterwards. We spent the whole day there and left just before the rain came pouring down :)

I apologise that the last two pictures came out funny as my camera lense had two oily stains on it and I couldn't get them off. But I did get to premier my new Blue dip dye!

Mummys Winter Spicy Chicken Stew

So my Mum is absolutely incredible when it comes to making Free From Meals. I couldn't be more thankful for all she has done for me, considering I started my new eating regime at 17/18 years old and instantly my Mum took on the task and made all these wonderful meals that I never thought i'd eat again like- Lasagne, pizza, Tagliatelle, spaghetti bolognese etc 

These are just some of my favourites and it is hard to ensure that I have a balanced diet especially being a gym goer like myself.

All the meals shown will be my Mums recipe or me making my Mums food haha. It is incredibly inspiring and I hope others like me (wheat/gluten/dairy free)  will find this as easy as I do, and that I can make this journey as easy as possible. Thanks to my Mummy!


Mummys Winter Spicy Chicken Stew-  


- Onions 
- Carrot
- Parsnip
- Sweede
- Celery
- Potato + sweet Potato
- Chicken stock 
- Vegetable stock cube 
- seasoned with Garlic/Salt/Pepper
- A tsp of Cumin 
-  Sprinkle of Chilli Flakes
- bag of Rocket (which I don't like but it is my means of getting calcium) 
- bag of Rice (Uncle Bens)
- chopped up and cooked Chicken Breast (left over from Sunday Roast) hehe


We chucked all of the ingrediants except the rice and chicken into a pot, bought to the boil. Then simmered until vegetables were cooked, added cooked chicken and cooked rice then bought to the boil again. Then simmered and ate ! 
Simples.

This tastes amazing, it's full of flavour and colour and is very healthy and filling. Couldn't ask for more. Please enjoy.
